| This volume includes five chapters that detail advances in chemistry research. Chapter 1 provides a comprehensive overview of food emulsions, with a focus on three key systems: (1) simple emulsions (O/W and W/O), (2) double emulsions (W/O/W and O/W/O), (3) and gelled emulsions. Chapter 2 reviews recent advances in the development of ionic liquid supported metal-oxide photocatalysts for the degradation of persistent organic pollutants, particularly textile dyes, in wastewater.
